No butter or flour in these cookies, yet they’re one of the richest cookies you’d have ever eaten. The peanut butter makes both butter and flour completely unnecessary as peanuts have high amounts of fat and peanut butter when baked is just as good as baking with flour.
Flourless Peanut Butter Cookies
Makes 22 cookies
Prep Time: 5 minutes
Cook Time: 15 minutes
- 3/4 cup castor sugar
- 1/4 cup brown sugar
- 1 cup peanut butter
- 1 egg
- 1 tsp vanilla essence
- Mix all the ingredients together with a spatula.
- Preheat the oven to 180°C and line a baking sheet with parchment.
- Drop tablespoons of the dough on the pan and make sure you space them out well because they spread.
- Bake for 15 minutes and let cool completely before removing from the baking sheet.
NOTE: These cookies are meant to be soft and chewy. It may seem like it’s undone when it’s ready, but it’ll harden enough to not crumble once it cools down.
